Diabetes Recipe This Lunch: Grass Fed Ox Tail with Stomach Towels Stew and Lightly Steamed Organic Spinach with Coconut Milk and Raw Garlic
My new lunch or maybe dinner menu for the extended family this Saturday will be: Grass Fed Ox Tail with Stomach Towels Stew and Lightly Steamed Organic Spinach with Coconut Milk and Raw Garlic – something very much diabetic safe for diabetes stricken people. I’m documenting this for you my diabetes diagnosed loved ones, this is how it is done.
Friday morning I went to the wet market and bought half of a lovely grass fed ox tail. At the same time I bought various stomach towels, there are 4 stomachs in a cow so I bought all 4 types. And I also bought a cow’s foot. The cow’s foot is rich in gelatinous material that will be used as the stew base.
This Saturday morning at 6am we began boiling the cow’s foot. Then at 9am we are scheduled to boil the tail and the stomach towels. And some 1 hour before serving, we will season the whole thing with the usual onions, carrots and bayleaf, salt and pepper, cayenne. And maybe some other flavoring.
My wife does not like the the indian seasoning I added last time. I’ll use something else later. She suggested atsuete, but I’ll see.
I’m off to market now to buy some organic spinach, and will also buy some freshly grated coconut for the coconut milk and later we also have raw garlic from nueva ecija… not found in Manila markets.
The plan is to lightly steam the spinach, cook the coconut milk, serve the garlic raw in the milk after it has cooled off. Mix this with the spinach.
